Sweet Potato toast is all the rage right now. I have actually been using sweet potatoes at buns for my hamburgers for years. I think they add a really great sweet component to any burger. One of my new favorite ways to eat sweet potatoes is as toast with peanut butter and banana. It is such a treat, but is really healthy and better for you than bread!

Sweet Potato Toast or Buns
Sweet potato toast or sweet potato buns are a great alternative to bread, which in many people can cause inflammation or stomach upset. For all the flavor without the guilt, swap out your next bun with a sweet potato and you might actually find that you like it better!

Instructions
  1. Wash and slice sweet potatoes into 1/2 inch rounds (you can slice lengthwise or in rounds)
  2. Preheat oven or toaster oven to 450 degrees (or get out a toaster)
  3. If making in oven, spray a baking sheet and lay sweet potatoes on top. If using the toaster, spray the potatoes on a plate
  4. Sprinkle spices across potatoes (if using a stand up toaster, you might want to wait until after it is toasted)
  5. Bake at 450 degrees for 40 minutes, flipping halfway through. If toasting, toast until cooked through and golden brown
  6. Enjoy as buns, toast, or just alone 🙂

Be careful if using a toaster to watch that it doesn't get overheated.
