Tumeric White Chicken Chili
Chili is always great comfort food but can often be loaded with unnecessary calories. This White Chicken Chili is not only low in calories but is high in anti-inflammatory herb, tumeric. You are welcome to add any other veggies that you enjoy for even more nutritional punch! This is a great dish to meal prep and freeze half for another time (just make sure you use a liquid safe tupperware)!

  1. In a big pot, brown the ground chicken breast. If using shredded precooked chicken, skip this step.
  2. Halfway through cooking the chicken, add the chopped green peppers and onion. If using precooked chicken, sautee the chopped peppers and onions until just tender.
  3. Once the chicken is cooked and veggies are just tender but not too soft, add the white beans and sautee for another 5 minutes. If you are using precooked chicken, add the shredded chicken in right before the beans.
  4. Add the stock/broth to the chicken, veggie, bean mixture.
  5. Add all the spices to the pot.
  6. 10 minutes before you want to serve it, add the kale to the chili for 5 minutes.
  7. Let cool for 5 minute before serving!
